Serves 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Cocktail (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put the listed components in a pot, heat until it reaches a simmer, agitating to dissolve. Then, remove from the stove allowing it to cool fully. Decant into a sealable bottle, seal keeping it in the fridge, it can be stored for about four weeks.
For the Cocktail Base: Mix all the liquid ingredients into a big jug, allow it to infuse for an hour, then strain preferably using a fine cloth, so it's fully clarified.
When ready to serve: Pour 85ml from the premix into a mixing glass packed with ice, and stir lightly for one minute to cool it down. Pour into an frosted cocktail glass or similar, garnish with the cranberries and complete it by giving it a light spray with the mandarin essence above the glass.
